- 2 Cornish game hens
- 1 cup cooked rice
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon thyme
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt the butter and sauté the celery and onion until soft.
- Add the cooked rice, cranberries, pecans, salt, pepper, and thyme. Mix well.
- Stuff the mixture into the Cornish game hens.
- Place the hens in a roasting pan and pour the chicken broth over them.
- Cover the pan with foil and roast for 45 minutes.
- Remove the foil and roast for an additional 15-20 minutes until golden brown.
- Let the hens rest for 10 minutes before serving.
