  • 1 cup cooked rice
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt the butter and sauté the celery and onion until soft.
  3. Add the cooked rice, cranberries, pecans, salt, pepper, and thyme. Mix well.
  4. Stuff the mixture into the Cornish game hens.
  5. Place the hens in a roasting pan and pour the chicken broth over them.
  6. Cover the pan with foil and roast for 45 minutes.
  7. Remove the foil and roast for an additional 15-20 minutes until golden brown.
  8. Let the hens rest for 10 minutes before serving.
