Ingredients

  • 2 acorn squashes
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Place the squashes cut side up on a baking sheet.
  4. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
  5. Fill each squash half with the mixture.
  6. If using, sprinkle cheese on top.
  7. Bake for 30-35 minutes until the squash is tender.
  8. Garnish with fresh cilantro before serving.
