- 1 lb chicken thighs, boneless
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 cup cucumber, sliced
- 1 cup carrots, shredded
- 2 green onions, chopped
- 1 tablespoon cilantro, chopped
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Cook the rice in chicken broth according to package instructions.
- In a pan, heat sesame oil over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Add chicken thighs and cook until browned on both sides.
- Pour soy sauce over the chicken, cover, and cook until fully cooked.
- Slice the cooked chicken.
- Assemble the bowl with rice, chicken, cucumber, carrots, and green onions.
- Garnish with cilantro.
