A delicious dessert combining strawberries and rhubarb with a crumbly topping.
Ingredients

- 2 cups strawberries, chopped
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix strawberries, rhubarb, sugar, cornstarch, and lemon juice.
- In another bowl, combine flour, baking powder, and salt.
- Cream butter and brown sugar together.
- Add flour mixture and oats to the butter mixture.
- Press half of the crumb mixture into the bottom of a greased baking dish.
- Spread fruit mixture over the crust.
- Sprinkle remaining crumb mixture on top.
- Bake for 45-50 minutes until golden brown.
- Cool before cutting into bars.
Notes
- Store in an airtight container.
- Can be served warm or cold.
- Add whipped cream for extra flavor.
