Ingredients

  • 2 cups strawberries, chopped
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix strawberries, rhubarb, sugar, cornstarch, and lemon juice.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Cream butter and brown sugar together.
  5. Add flour mixture and oats to the butter mixture.
  6. Press half of the crumb mixture into the bottom of a greased baking dish.
  7. Spread fruit mixture over the crust.
  8. Sprinkle remaining crumb mixture on top.
  9. Bake for 45-50 minutes until golden brown.
  10. Cool before cutting into bars.
