- 1 1/2 cups red velvet cake mix
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C).
- Mix red velvet cake mix and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract to the cream cheese and mix well.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into the cream cheese mixture.
- Spread the cream cheese mixture over the cake layer in the pan.
- Refrigerate for at least 4 hours or until set.
- In a small bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 15 minutes.
- Top the cheesecake with the strawberry mixture before serving.
