Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 15×10 inch jelly roll pan with parchment paper.
  3. In a bowl, beat eggs and sugar until thick and pale.
  4. Add vanilla extract and mix well.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. Fold the dry ingredients into the egg mixture.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 12-15 minutes or until golden.
  9. While warm, roll the cake with the parchment paper and let cool.
  10. In a separate bowl, whip the cream with powdered sugar until stiff peaks form.
  11. Unroll the cooled cake and spread whipped cream and strawberries on top.
  12. Roll the cake back up and refrigerate for at least 1 hour before serving.
