Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14 oz)
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic to the pot; sauté until soft.
  5. Add carrots, potatoes, and bell pepper; stir for 5 minutes.
  6. Return chicken to the pot.
  7. Add tomatoes, chicken broth, thyme, and paprika.
  8. Season with salt and pepper.
  9. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  10. Serve hot.

  • For a thicker stew, mash some of the potatoes.
