Ingredients

- 2 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14 oz)
- 2 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add chicken pieces and brown on all sides.
- Remove chicken and set aside.
- Add onion and garlic to the pot; sauté until soft.
- Add carrots, potatoes, and bell pepper; stir for 5 minutes.
- Return chicken to the pot.
- Add tomatoes, chicken broth, thyme, and paprika.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Serve hot.
Notes
- Adjust seasoning as per your taste.
- For a thicker stew, mash some of the potatoes.
- Serve with rice or bread.
