A simple recipe to make Starbucks-style egg bites at home.
Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup cooked and chopped bacon or sausage
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
Instructions
- Preheat your oven to 300°F (150°C).
- In a blender, combine eggs, cottage cheese, salt, pepper, and paprika. Blend until smooth.
- Stir in the cheese and cooked meat.
- Grease a muffin tin or use silicone molds.
- Pour the egg mixture into the molds, filling them about 2/3 full.
- Place the muffin tin in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the muffin tin.
- Bake for 25-30 minutes, or until the egg bites are set.
- Remove from the oven and let cool slightly before removing from molds.
Notes
- Experiment with different ingredients like spinach or bell peppers.
- Store leftovers in the fridge for up to 5 days.
- Reheat in the microwave for a quick breakfast.
