Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup cooked and chopped bacon or sausage
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a blender, combine eggs, cottage cheese, salt, pepper, and paprika. Blend until smooth.
  3. Stir in the cheese and cooked meat.
  4. Grease a muffin tin or use silicone molds.
  5. Pour the egg mixture into the molds, filling them about 2/3 full.
  6. Place the muffin tin in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the muffin tin.
  7. Bake for 25-30 minutes, or until the egg bites are set.
  8. Remove from the oven and let cool slightly before removing from molds.
