- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the rib roast.
- Place the roast in a roasting pan, bone side down.
- Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness (about 120°F for rare, 130°F for medium-rare, 140°F for medium).
- Remove from the oven and let it rest for 20 minutes before carving.
