Ingredients

- 1 cup dried green or yellow split peas
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 stalks of celery, diced
- 3 cloves of minced garlic
- 4 cups vegetable broth (or water)
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the split peas under cold water and set aside to drain.
- Dice the onion, carrots, and celery into uniform pieces.
- In a large pot, heat olive oil over medium heat and sauté the diced onion, carrots, and celery for 5-7 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Stir in the rinsed split peas, bay leaves, dried thyme, and season with salt and pepper.
- Pour in the vegetable broth (or water), bring to a boil, then reduce heat to low and simmer for 45 minutes to 1 hour.
- Optionally, blend the soup for a smoother texture or leave it chunky.
- Serve garnished with fresh herbs and enjoy with crusty bread or a side salad.
Notes
- Rinse the split peas to remove dirt.
- Sauté vegetables long enough to develop flavors.
