Ingredients

  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the split peas under cold water and set aside to drain.
  2. Dice the onion, carrots, and celery into uniform pieces.
  3. In a large pot, heat olive oil over medium heat and sauté the diced onion, carrots, and celery for 5-7 minutes until softened.
  4. Add minced garlic and cook for an additional minute.
  5. Stir in the rinsed split peas, bay leaves, dried thyme, and season with salt and pepper.
  6. Pour in the vegetable broth (or water), bring to a boil, then reduce heat to low and simmer for 45 minutes to 1 hour.
  7. Optionally, blend the soup for a smoother texture or leave it chunky.
  8. Serve garnished with fresh herbs and enjoy with crusty bread or a side salad.
