Description
A delicious and nutritious spinach lasagna recipe that combines layers of creamy ricotta, gooey mozzarella, and vibrant spinach, all enveloped in tangy marinara sauce.
Ingredients
- Lasagna noodles: 12 sheets (uncooked)
 - Ricotta cheese: 15 oz (425 g)
 - Fresh spinach: 10 oz (280 g), chopped or 1 package frozen, thawed and drained
 - Marinara sauce: 3 cups (720 ml)
 - Mozzarella cheese: 2 cups (200 g), shredded
 - Parmesan cheese: 1 cup (100 g), grated
 - Garlic: 2 cloves, minced
 - Olive oil: 2 tablespoons
 - Salt and pepper: to taste

Instructions
- Prepare the spinach by sautéing minced garlic in olive oil, then add chopped spinach and cook until wilted.
 - Make the cheese mixture by combining ricotta cheese with half of the grated Parmesan, and season with salt and pepper.
 - Prepare the marinara sauce, either store-bought or homemade.
 - Assemble the lasagna by layering marinara sauce, noodles, cheese mixture, spinach, and mozzarella in a baking dish.
 - Bake the lasagna covered with foil for 25 minutes, then uncover and bake for an additional 15-20 minutes until bubbly and golden.
 - Let the lasagna rest for 10-15 minutes before slicing and serving.

Notes
- Using frozen spinach is acceptable; just ensure it is thawed and drained.
 - Allowing the lasagna to rest after baking helps the layers set.
 - Season each layer for enhanced flavor.
 - Covering the lasagna while baking prevents the cheese from burning.
