Ingredients

  • Lasagna noodles: 12 sheets (uncooked)
  • Ricotta cheese: 15 oz (425 g)
  • Fresh spinach: 10 oz (280 g), chopped or 1 package frozen, thawed and drained
  • Marinara sauce: 3 cups (720 ml)
  • Mozzarella cheese: 2 cups (200 g), shredded
  • Parmesan cheese: 1 cup (100 g), grated
  • Garlic: 2 cloves, minced
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Prepare the spinach by sautéing minced garlic in olive oil, then add chopped spinach and cook until wilted.
  2. Make the cheese mixture by combining ricotta cheese with half of the grated Parmesan, and season with salt and pepper.
  3. Prepare the marinara sauce, either store-bought or homemade.
  4. Assemble the lasagna by layering marinara sauce, noodles, cheese mixture, spinach, and mozzarella in a baking dish.
