- 2 large eggs
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted.
- In a bowl, whisk the eggs with salt and pepper.
- Pour the eggs into the skillet with spinach.
- Cook until the edges begin to set.
- Add feta cheese on one half of the omelet.
- Fold the omelet in half and cook for another minute.
- Serve hot.
