A zesty and flavorful pasta salad with a taco twist.
Ingredients

- 2 cups pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, rinsed and drained
- 1 cup bell peppers, diced
- 1/2 cup red onion, finely chopped
- 1 cup shredded cheese
- 1/4 cup fresh cilantro, chopped
- 1/4 cup taco seasoning
- 1/2 cup ranch dressing
- 1 lime, juiced
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cooled pasta, cherry tomatoes, corn, black beans, bell peppers, red onion, and cheese.
- In a small bowl, mix taco seasoning, ranch dressing, and lime juice.
- Pour dressing over pasta salad and toss to combine.
- Garnish with fresh cilantro.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust spice level by altering taco seasoning.
- Best served cold.
- Can be prepared a day in advance.
