Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 tomatoes, chopped
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Add garlic and ginger; cook for 1 minute.
  5. Stir in curry powder, cumin, and turmeric; cook for 30 seconds.
  6. Add chopped tomatoes and cook for 2 minutes.
  7. Pour in vegetable broth and coconut milk.
  8. Add lentils and bring to a boil.
  9. Reduce heat and simmer for 20-25 minutes until lentils are soft.
  10. Season with salt and garnish with cilantro before serving.
