Ingredients

  • Wontons – 20 pieces
  • Red curry paste – 2 tablespoons
  • Coconut milk – 1 can (400ml)
  • Vegetable broth – 4 cups
  • Garlic – 3 cloves, minced
  • Ginger – 1 inch, grated
  • Bell pepper – 1, sliced
  • Carrot – 1, julienned
  • Spinach – 2 cups
  • Lime – 1, juiced
  • Fresh cilantro – for garnish

Instructions

  1. In a pot, heat a little oil over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Stir in red curry paste and cook for 1 minute.
  4. Pour in coconut milk and vegetable broth, bring to a simmer.
  5. Add bell pepper and carrot, cook for 5 minutes.
  6. Gently add wontons and cook until they float.
  7. Stir in spinach and lime juice, cook for 2 more minutes.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • This soup can be made vegetarian by using vegetable wontons.
  • Adjust the spice level by adding more or less curry paste.
  • Feel free to add other vegetables as desired.
