A flavorful and spicy red curry wonton soup that warms your soul.
Ingredients
- Wontons – 20 pieces
- Red curry paste – 2 tablespoons
- Coconut milk – 1 can (400ml)
- Vegetable broth – 4 cups
- Garlic – 3 cloves, minced
- Ginger – 1 inch, grated
- Bell pepper – 1, sliced
- Carrot – 1, julienned
- Spinach – 2 cups
- Lime – 1, juiced
- Fresh cilantro – for garnish
Instructions
- In a pot, heat a little oil over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Stir in red curry paste and cook for 1 minute.
- Pour in coconut milk and vegetable broth, bring to a simmer.
- Add bell pepper and carrot, cook for 5 minutes.
- Gently add wontons and cook until they float.
- Stir in spinach and lime juice, cook for 2 more minutes.
- Serve hot, garnished with fresh cilantro.
Notes
- This soup can be made vegetarian by using vegetable wontons.
- Adjust the spice level by adding more or less curry paste.
- Feel free to add other vegetables as desired.
