Ingredients

  • 8 oz rice noodles
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes
  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a bowl, mix peanut butter, soy sauce, rice vinegar, sesame oil, honey, and red pepper flakes until smooth.
  3. Drain noodles and rinse under cold water.
  4. Toss noodles with the peanut sauce until well coated.
  5. Add carrots, bell peppers, green onions, and cilantro. Mix well.
  6. Serve chilled or at room temperature.

Notes

  • Adjust spice level by adding more or less red pepper flakes.
  • Can be stored in the refrigerator for up to 3 days.
