Instructions
- Mix maple syrup, soy sauce, and chili flakes in a bowl.
- Marinate chicken thighs in the mixture for at least 30 minutes.
- In a pot, combine rice, coconut milk, water, and salt.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
- Cook marinated chicken in a skillet over medium heat until fully cooked.
- Serve chicken over coconut rice and garnish with cilantro.
