Ingredients

Instructions

  1. Heat a large pan over medium heat.
  2. Add onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in red curry paste and cook for 2 minutes.
  4. Add chicken thighs and brown on all sides.
  5. Pour in coconut milk, lime juice, and fish sauce.
  6. Bring to a simmer, cover, and cook for 25 minutes.
  7. Add red bell pepper and cook for an additional 10 minutes.
  8. Season with sugar and salt to taste.
  9. Garnish with fresh cilantro before serving.
