Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Season with salt, pepper, paprika, thyme, rosemary, and bay leaf.
  5. Add whole chicken and chicken broth. Bring to a boil.
  6. Reduce heat and simmer for 1 hour.
  7. Remove chicken, shred the meat, and return to the pot.
  8. Add noodles if desired and cook until tender.
  9. Serve hot.
