Ingredients

- 1 whole chicken
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 8 cups chicken broth
- 1 cup noodles (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Season with salt, pepper, paprika, thyme, rosemary, and bay leaf.
- Add whole chicken and chicken broth. Bring to a boil.
- Reduce heat and simmer for 1 hour.
- Remove chicken, shred the meat, and return to the pot.
- Add noodles if desired and cook until tender.
- Serve hot.

- Use fresh herbs for better flavor.
- Adjust spices according to your taste.
- Can be stored in the refrigerator for up to 3 days.
