A simple and flavorful spatchcock turkey recipe perfect for Thanksgiving.
Ingredients

- 1 whole turkey (12–14 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried thyme
- 1 lemon, juiced
Instructions
- Preheat your oven to 450°F (232°C).
- Remove the turkey giblets and pat the turkey dry.
- Place the turkey breast-side down on a cutting board.
- Using kitchen shears, cut along both sides of the backbone and remove it.
- Flip the turkey over and press down on the breast to flatten it.
- Rub the turkey with olive oil, salt, pepper, garlic powder, onion powder, thyme, and lemon juice.
- Place the turkey on a baking sheet and roast for 1.5 to 2 hours.
- Check the internal temperature, it should reach 165°F (74°C).
- Let the turkey rest for 20 minutes before carving.
