- 1/4 cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until smooth.
- Beat in the egg and vanilla extract.
- Mix in the flour, salt, and rosemary until combined.
- Form the dough into small balls and roll them in sugar.
- Place the balls on a baking sheet.
- Make an indentation in the center of each ball with your thumb.
- Fill each indentation with apricot preserves.
- Bake for 15-18 minutes or until lightly golden.
- Allow to cool before serving.
