Description

Ingredients

  • 2 cups of rice
  • 4 cups of chicken broth
  • 1 cup of diced tomatoes
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon of saffron threads
  • 1 pound of chicken, cut into pieces
  • 1 pound of shrimp, peeled and deveined
  • 1 cup of peas
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add chicken pieces, cook until browned.
  4. Add bell pepper and tomatoes, stir well.
  5. Add rice and saffron, mix to coat the rice.
  6. Pour in chicken broth, bring to a boil.
  7. Reduce heat, cover and simmer for 20 minutes.
  8. Add shrimp and peas, cook for an additional 5 minutes.
  9. Remove from heat and let it sit for 5 minutes.
  10. Serve hot.

Notes

  • Use short-grain rice for best results.
