Description
A traditional Spanish dish made with rice, saffron, and various meats and seafood.
Ingredients
Scale
- 2 cups of rice
- 4 cups of chicken broth
- 1 cup of diced tomatoes
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon of saffron threads
- 1 pound of chicken, cut into pieces
- 1 pound of shrimp, peeled and deveined
- 1 cup of peas
- Olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add chicken pieces, cook until browned.
- Add bell pepper and tomatoes, stir well.
- Add rice and saffron, mix to coat the rice.
- Pour in chicken broth, bring to a boil.
- Reduce heat, cover and simmer for 20 minutes.
- Add shrimp and peas, cook for an additional 5 minutes.
- Remove from heat and let it sit for 5 minutes.
- Serve hot.
Notes
- Use short-grain rice for best results.
- Adjust the types of meat and seafood to your preference.
- Letting it rest enhances the flavor.
