Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, black olives, bell pepper, and parsley.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Refrigerate for at least 30 minutes before serving.
