Description
A one-pan dish featuring ground beef and sweet potatoes with southwestern flavors.
Ingredients

- 1 pound ground beef
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and bell peppers, and sauté until soft.
- Add garlic, and cook for 1 minute.
- Add ground beef, and cook until browned.
- Stir in sweet potatoes, chili powder, cumin, salt, and pepper.
- Add black beans and corn, and mix well.
- Cover and cook for 15-20 minutes until sweet potatoes are tender.
- Serve hot.
Notes
- Adjust spices according to taste.
- Top with avocado or cheese if desired.
- Can be made ahead and reheated.
