Description

A one-pan dish featuring ground beef and sweet potatoes with southwestern flavors.


Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and bell peppers, and sauté until soft.
  3. Add garlic, and cook for 1 minute.
  4. Add ground beef, and cook until browned.
  5. Stir in sweet potatoes, chili powder, cumin, salt, and pepper.
  6. Add black beans and corn, and mix well.
  7. Cover and cook for 15-20 minutes until sweet potatoes are tender.
  8. Serve hot.

Notes

  • Adjust spices according to taste.
  • Top with avocado or cheese if desired.
  • Can be made ahead and reheated.
