Ingredients

- 1 cup brown rice
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups vegetable broth
- Salt to taste
- Olive oil for cooking
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, and sauté until soft.
- Add diced sweet potatoes and cook for 5 minutes.
- Stir in the red bell pepper, cumin, and chili powder.
- Add the brown rice and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Stir in black beans and cook for an additional 5 minutes.
- Season with salt and garnish with cilantro before serving.
