Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups vegetable broth
  • Salt to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, and sauté until soft.
  3. Add diced sweet potatoes and cook for 5 minutes.
  4. Stir in the red bell pepper, cumin, and chili powder.
  5. Add the brown rice and vegetable broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Stir in black beans and cook for an additional 5 minutes.
  8. Season with salt and garnish with cilantro before serving.
