Ingredients

  • 1 lb chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pot over medium heat.
  2. Add onion and bell pepper, sauté until soft.
  3. Add garlic and cook for 1 minute.
  4. Stir in chicken and cook until browned.
  5. Add black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Serve hot, garnished with fresh cilantro.
