Ingredients

- 1 lb chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a large pot over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add garlic and cook for 1 minute.
- Stir in chicken and cook until browned.
- Add black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, garnished with fresh cilantro.

- Use rotisserie chicken for a quicker option.
- Adjust spices to taste for desired heat.
