Ingredients

- 1 cup black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, finely chopped

- 1 lime, juiced
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup ranch dressing or vinaigrette
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Drizzle ranch dressing or vinaigrette on top before serving.
- Serve chilled or at room temperature.

- This salad can be made a day ahead; just add avocado right before serving.
