Crispy southern salmon croquettes made with fresh salmon and herbs.


Ingredients

Scale
  • 1 can of salmon (14.75 oz)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. Drain the salmon and flake it into a bowl.
  2. Add breadcrumbs, onion, parsley, egg, mustard, salt, and pepper.
  3. Mix until well combined.
  4. Form the mixture into small patties.
  5. Heat oil in a skillet over medium heat.
  6. Fry the patties until golden brown on both sides.
  7. Remove and drain on paper towels.

Notes

  • Serve with tartar sauce or lemon wedges.
  • Can substitute canned salmon with fresh cooked salmon.
  • Store leftovers in the refrigerator for up to 3 days.
