Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 3 hard-boiled eggs, chopped
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 1/4 cup sweet pickles, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes.
  2. Drain the potatoes and let them cool.
  3. In a large bowl, mix mayonnaise and mustard until well combined.
  4. Add the cooled potatoes, chopped eggs, celery, onion, and pickles.
  5. Season with salt and pepper to taste.
  6. Toss gently to combine all ingredients.
  7. Chill in the refrigerator for at least 1 hour before serving.
