Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add vegetable broth, diced tomatoes, thyme, and basil. Bring to a boil.
- Reduce heat and let simmer for 15 minutes.
- Add spinach, salt, and pepper. Cook for another 5 minutes.
- Serve hot.
Notes
- Use fresh vegetables for better flavor.
- Store leftovers in the fridge for up to 3 days.
- You can add beans for extra protein.
