Ingredients

  • 6 cups vegetable broth

  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, thyme, and basil. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Add spinach or kale and cook for another 5 minutes.
  8. Serve hot.
