  • 1 cup pasta (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add mixed vegetables and pasta if using. Cook for another 10 minutes.
  7. Remove bay leaf before serving.
