Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Stir in garlic and thyme. Cook for 1 minute.
  4. Add diced tomatoes and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add green beans and corn. Cook for another 10 minutes.
  7. Season with salt and pepper. Serve hot.
