A hearty and comforting soup made in a crockpot.
Ingredients

- 1 lb chicken breast
- 4 cups chicken broth
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Place the chicken breast in the crockpot.
- Add the chicken broth and mixed vegetables.
- Stir in the onion, garlic, salt, pepper, thyme, and bay leaf.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Remove the chicken, shred it, and return to the soup.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Use fresh vegetables for better flavor.
- Can substitute chicken with turkey or tofu for a different protein.
