- 1 box strawberry cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup powdered sugar (for rolling)
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar (for frosting)
- 1/4 cup strawberry puree
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the strawberry cake mix, vegetable oil, and eggs until smooth.
- Roll the dough into small balls, then roll them in powdered sugar.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until edges are set.
- Let cookies cool completely on a wire rack.
- In another bowl, cream the softened butter, powdered sugar, strawberry puree, and vanilla until smooth.
- Spread frosting on the bottom of half the cookies and top with the remaining cookies.
Notes
- Store cookies in an airtight container.
- You can use fresh strawberries for the puree if desired.
- Adjust the frosting consistency with more powdered sugar if needed.
