Delicious soft chewy pistachio coconut macaroons

- 2 cups shredded coconut
- 1 cup powdered sugar
- 1/2 cup pistachios, chopped
- 2 egg whites
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix shredded coconut, powdered sugar, and chopped pistachios.
- In another bowl, whisk egg whites, vanilla extract, and salt until frothy.
- Combine the wet and dry ingredients.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden brown.
- Let cool before serving.

- These macaroons can be frozen.
