Delicious snickerdoodle apple pie bars with a cinnamon sugar topping.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups apples, peeled and chopped
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
- 1 tablespoon flour
- 1 teaspoon cinnamon
- 1/4 cup sugar for topping
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, cream butter and sugar until smooth.
- Add eggs and vanilla to the butter mixture, mix well.
- Gradually add dry ingredients to the wet mixture, stir until combined.
- Press half of the dough into a greased baking pan.
- In a separate bowl, toss apples with lemon juice, brown sugar, flour, and cinnamon.
- Spread apple mixture over the dough in the pan.
- Drop remaining dough in spoonfuls over the apples.
- Mix sugar and cinnamon for the topping and sprinkle over the bars.
- Bake for 30-35 minutes or until golden brown.
- Let cool before cutting into bars.
Notes
- Store bars in an airtight container.
- Best enjoyed within a week.
- Can be served warm or cold.
