Instructions
- Slice the green tomatoes and sprinkle with salt.
- Let them sit for 15 minutes to draw out moisture.
- Dip each tomato slice in buttermilk, then coat in cornmeal mixed with smoked paprika.
- Heat oil in a skillet over medium heat.
- Fry the tomato slices until golden brown, about 3-4 minutes per side.
- In a bowl, combine diced tomatoes, onion, cilantro, and lime juice to make salsa.
- Serve the fried tomatoes hot with fresh salsa on the side.
