- 8 small tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup avocado, diced
- 1/4 cup sour cream
Instructions
- Boil the potatoes until tender, about 15-20 minutes.
- Drain and let the potatoes cool slightly.
- Preheat the oven to 425°F (220°C).
- Smash each potato with a fork or the palm of your hand.
- Brush the smashed potatoes with olive oil and season with salt, pepper, and garlic powder.
- Place them on a baking sheet and bake for 20-25 minutes until crispy.
- Warm the tortillas in a skillet.
- Assemble the tacos by placing smashed potatoes in the tortillas.
- Add lettuce, tomatoes, avocado, and sour cream on top.
- Serve immediately.
