Ingredients

- 2 lbs baby potatoes
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- 2 green onions, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil the baby potatoes until fork-tender.
- Drain and let cool slightly.
- Slightly smash the potatoes with a fork.
- In a bowl, mix mayonnaise, sour cream, and Dijon mustard.
- Add the smashed potatoes and mix gently.
- Stir in green onions and parsley.
- Season with salt and pepper.
- Chill in the refrigerator for 30 minutes before serving.

- Use fresh herbs for better flavor.
- Adjust the creaminess by adding more or less mayonnaise.
