Ingredients

  • 1 whole chicken (about 45 lbs)
  • 10 cloves garlic, minced
  • 1 onion, quartered
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon rosemary
  • 1 teaspoon thyme

Instructions

  1. Pat the chicken dry and season it with salt, pepper, rosemary, and thyme.
  2. Heat olive oil in a skillet over medium heat.
  3. Sear the chicken on all sides until golden brown.
  4. Place the onion and garlic in the bottom of the slow cooker.
  5. Add the chicken on top of the onion and garlic.
  6. Pour chicken broth around the chicken.
  7. Cover and cook on low for 6-8 hours or until the chicken is fully cooked.
  8. Remove the chicken and let it rest before carving.

  • Serve with vegetables or over rice.
  • Store leftovers in an airtight container in the fridge.
