Description

A hearty dish of pinto beans cooked slowly with green chiles and beef.


Ingredients

  • 2 cups pinto beans
  • 1 pound ground beef
  • 1 can (4 oz) diced green chiles
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse and soak pinto beans overnight.
  2. In a skillet, brown the ground beef with onion and garlic.
  3. Drain excess fat from the beef mixture.
  4. Add the beef mixture, soaked beans, green chiles, beef broth, cumin, salt, and pepper to the slow cooker.
  5. Stir to combine all ingredients.
  6. Cook on low for 8 hours or high for 4 hours.
  7. Check beans for tenderness before serving.
