Ingredients

  • 2 lbs chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, mix honey, soy sauce, ketchup, garlic, and rice vinegar.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and set aside.
  6. Mix cornstarch and water in a small bowl.
  7. Add cornstarch mixture to the slow cooker and stir.
  8. Cook on high for an additional 15-20 minutes until sauce thickens.
  9. Return chicken to the sauce and serve.
