Ingredients

- 3 to 4 pounds beef chuck roast
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 onion, chopped
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 2 cups beef broth
- Salt and pepper to taste
Instructions
- Season the roast with salt and pepper.
- In a skillet, brown the roast on all sides.
- Place the browned roast in the slow cooker.
- Add garlic, rosemary, thyme, onion, carrots, and potatoes around the roast.
- Pour beef broth over the ingredients.
- Cover and cook on low for 8 hours or until tender.
- Remove the roast and vegetables, and let rest before slicing.

- Use fresh herbs for better flavor.
- Adjust cooking time based on the size of the roast.
- Leftovers can be stored in the refrigerator for up to 3 days.
