Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add the chopped onion and minced garlic, cooking until soft.
  3. Transfer the beef mixture to the slow cooker.
  4. Add black beans, corn, diced tomatoes, diced potatoes, chili powder, cumin, salt, and pepper.
  5. Stir well to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Before serving, sprinkle shredded cheddar cheese on top and let it melt.
