Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 cup diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add the chopped onion and minced garlic, cooking until soft.
- Transfer the beef mixture to the slow cooker.
- Add black beans, corn, diced tomatoes, diced potatoes, chili powder, cumin, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, sprinkle shredded cheddar cheese on top and let it melt.
