  • 2 medium sweet potatoes, peeled and cubed
  • 1 can coconut milk (13.5 oz)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup spinach, chopped
  • Fresh cilantro for garnish

Instructions

  1. Place chicken, sweet potatoes, onion, garlic, and ginger in the slow cooker.
  2. Add curry powder, cumin, salt, and pepper.
  3. Pour in coconut milk and chicken broth.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. During the last 30 minutes, stir in spinach.
  7. Garnish with fresh cilantro before serving.
