- 2 lbs chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 can coconut milk (13.5 oz)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup spinach, chopped
- Fresh cilantro for garnish
Instructions
- Place chicken, sweet potatoes, onion, garlic, and ginger in the slow cooker.
- Add curry powder, cumin, salt, and pepper.
- Pour in coconut milk and chicken broth.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- During the last 30 minutes, stir in spinach.
- Garnish with fresh cilantro before serving.
