Ingredients

  • Chicken thighs: 1.5 lbs (about 6 pieces, bone-in and skin-on for more flavor)
  • Baby potatoes: 1.5 lbs (about 24 oz, washed and halved)
  • Garlic: 4 cloves (minced)
  • Chicken broth: 1 cup (low-sodium preferred)
  • Fresh rosemary: 2 tablespoons (chopped, or 1 tablespoon dried)
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)
  • Olive oil: 1 tablespoon (optional, for browning the chicken)

Instructions

  1. Prepare the chicken thighs by seasoning with salt and pepper, and optionally sear them in olive oil until golden brown.
  2. Wash and halve the baby potatoes.
  3. In the slow cooker, add the halved potatoes and sprinkle minced garlic over them.
  4. Place the seared chicken thighs on top of the potatoes.
  5. Pour the chicken broth over the ingredients and sprinkle with rosemary, salt, and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Once cooked, serve the chicken and potatoes with some broth spooned over the top.
