Description
A comforting and easy meal made with chicken thighs and baby potatoes, cooked slowly to enhance flavors.
Ingredients
- Chicken thighs: 1.5 lbs (about 6 pieces, bone-in and skin-on for more flavor)
- Baby potatoes: 1.5 lbs (about 24 oz, washed and halved)
- Garlic: 4 cloves (minced)
- Chicken broth: 1 cup (low-sodium preferred)
- Fresh rosemary: 2 tablespoons (chopped, or 1 tablespoon dried)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1/2 teaspoon (or to taste)
- Olive oil: 1 tablespoon (optional, for browning the chicken)
Instructions
- Prepare the chicken thighs by seasoning with salt and pepper, and optionally sear them in olive oil until golden brown.
- Wash and halve the baby potatoes.
- In the slow cooker, add the halved potatoes and sprinkle minced garlic over them.
- Place the seared chicken thighs on top of the potatoes.
- Pour the chicken broth over the ingredients and sprinkle with rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, serve the chicken and potatoes with some broth spooned over the top.

- Feel free to add other vegetables like carrots or onions for extra nutrition.
