Ingredients
- Beef chuck: 2 lbs, cut into 1-inch cubes
- Carrots: 4 medium, sliced
- Potatoes: 4 medium, diced

- Beef broth: 4 cups
- Thyme: 1 teaspoon, dried
- Bay leaves: 2

Instructions
- Prepare all ingredients by washing, peeling, and chopping as needed.
- Brown the beef in a skillet with olive oil over medium-high heat for 5-7 minutes.
- Layer the browned beef in the slow cooker, followed by the carrots, potatoes, onions, and garlic.
- Pour the beef broth over the ingredients and add thyme and bay leaves.
