Description

Slow cooker beef barbacoa is a flavorful and tender dish made from beef that’s cooked low and slow with spices.


Ingredients

  • 3 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp chipotle in adobo sauce
  • 1 tbsp ground cumin
  • 1 tbsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup beef broth

Instructions

  1. Trim excess fat from the beef chuck roast.
  2. Season the roast with salt, pepper, cumin, and oregano.
  3. Place the roast in the slow cooker.
  4. Add onion, garlic, lime juice, apple cider vinegar, chipotle, and beef broth.
  5. Cover and cook on low for 8 hours or until tender.
  6. Shred the beef with two forks and mix with the juices.
  7. Serve with tortillas or rice.

  • Adjust spice level by adding more or less chipotle.
