A lighter version of the classic chicken fettuccine alfredo, this dish is low in fat but full of flavor.
Ingredients

- 8 oz whole wheat fettuccine
- 1 lb skinless chicken breast, diced
- 1 cup low-fat milk
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Cook fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add diced chicken, salt, and pepper. Cook until chicken is no longer pink.
- Pour in low-fat milk and bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked fettuccine to the skillet and toss to coat.
- Garnish with parsley and serve warm.
Notes
- Use a non-stick skillet to reduce the amount of oil needed.
- Adjust the cheese quantity for desired creaminess.
- For extra flavor, add Italian herbs.
